This rosé combines the savoury and aromatic deliciousness of Great Western Nebbiolo with a small amount of the sweet red fruited juiciness of Grampians Shiraz. Fermented and matured on lees in old French oak barrels and then allowed to settle and racked as clean as possible before bottling with minimal sulfur and no filtration. This is a bone dry rose with no residual sugar. Bottled on 20th December 2017. Descending waxing sickle moon in Capricorn on a root day.

Colour: Pale Salmon pink with an onion skin hue.
Nose: Lifted notes of red flowers, sweet stone fruits and warm spices.
Palate: Savoury and satisfying red fruit flavours with crystalline acidity and a creamy dry finish. Try it chilled on a warm day beside the sea or a river. It also tastes great when served with tuna or salmon dishes.
