From the coolest mainland site in Australia, ideal for Gewürztraminer. Left on the skins for few hours before fermenting with wild yeasts. The wine was bottled à la pétillante naturelle to finish fermentation in bottle which leaves a natural sediment. No sulfur, fining, filtration, or other additive or process was made to this wine. It is as fresh and unblemished a wine as we can create.

Bouquet: A burst of ginger combines with a fusillade of exotic fruits, fresh pastries and sparkly white flowers, finishing with a hint of white peach.
Palate: Refreshing flavours of citrus, guava, ginger and iced tea are resplendent within the creamy fizz and delicate bead.
This wine is best served shaking slightly before opening to allow the flavours from the sediment to spread throughout the wine. A fine mousse is evident when first poured. As this wine has no preservatives, it is best drunk within a few years of the vintage
